Enzymatic Probiotics and later successfully cured herself of hyperthyroidism. Her story has spread around the village. After her story appear in the local media, many has come to the temple for remedies and some followed her footsteps to D.I.Y., most of them were cured of their chronic diseases later on. This method is very popular because the ingredients used are simple and easily available at any supermarket, it also does not require any fermentation/culture starter like the kefir grains, all you need is fruits/vegetables and sugar, that’s all ! The fermentation will take place in the most natural way. I have been doing this for almost 10 years now, it has never failed me once. Sometimes it is hard to believe that something so simple to D.I.Y. can have so significant benefits to your health. I am glad that I have made the right decision the moment I heard about it and live a healthy lifestyle ever since. As preliminary results the functional properties of pulse ingredients are varied upon their protein content and pH of the food carrier. Orange juice, apple juice, yogurt and two probiotic fermented milk were selected for supplementation. 1% and 2% pulse fractions gave comparable results in terms of turbidity, cloud and visual stability, color and sensory attributes for both orange and apple juices beverages. All supplements improved the acidification rate of yogurt and probiotic cultures, but the highest effects were obtained with probiotic supplementation with lentil and soy flour. Fermentation time using 1 per cent inoculum of L. acidophilus was optimized on the basis of RSM trial version, The 65:35 blend ratio of whey and watermelon juice fermented for 24 hrs. gave desirable results with highest sensory scores for overall acceptability and a total viable count of more than 106 cfu ml-1.beverage kept for 20 days below refrigerated temp and 120 hrs. at ambient temperature for the analysis for sensory and changes in titrable acidity, pH, total viable count.
