✏Lateral Cooking Book Summary : 'You could cook from it over a whole lifetime, and still be learning' Nigella Lawson 'A rigorous, nuts-and-bolts bible of a book' Jay Rayner, Observer 'Lateral Cooking...uncovers the very syntax of cookery' Yotam Ottolenghi 'Astonishing and totally addictive' Brian Eno The groundbreaking new book that reveals the principles underpinning all recipe creation, from the author of the bestselling The Flavour Thesaurus Do you feel you that you follow recipes slavishly without understanding how they actually work? Would you like to feel freer to adapt, to experiment, to play with flavours? Niki Segnit, author of the landmark book The Flavour Thesaurus, gives you the tools to do just that. Lateral Cooking is organised into 77 'starting-point' recipes, reducing the phenomenal variety of world cuisine down to its bare essentials – and then building it back up again. So, under 'Bread', we learn that flatbreads, oatcakes, buckwheat noodles, chapattis and tortillas are all variations on one theme. A few simple tweaks and you can make soda bread, scones or cobbler. And so on, through breads and batters, broths, stews and dals, one dish leading to another. Lateral Cooking is as inspirational and entertaining a read as it is a practical guide. Once you have the hang of each starting point, a wealth of flavour possibilities awaits, each related in Niki's signature combination of culinary science, history, chefs' wisdom and personal anecdote. You will realise that recipes that you had thought were outside of your experience are reassuringly similar to things you've made a dozen times before. It will give you the confidence to experiment with flavour, and adapt with the seasons or the contents of your fridge. You will, in short, learn to cook 'by heart'– and that's where the fun really begins.

✏Falastin Book Summary : A soulful tour of Palestinian cooking today from the Ottolenghi restaurants’ executive chef and partner—120 recipes shaped by his personal story as well as the history of Palestine. “Truly, one of the best cookbooks of the year so far.”—Bon Appétit The story of Palestine’s food is really the story of its people. When the events of 1948 forced residents from all regions of Palestine together into one compressed land, recipes that were once closely guarded family secrets were shared and passed between different groups in an effort to ensure that they were not lost forever. In Falastin (pronounced “fa-la-steen”), Sami Tamimi retraces the lineage and evolution of his country’s cuisine, born of its agriculturally optimal geography, its distinct culinary traditions, and Palestinian cooks’ ingenuity and resourcefulness. Tamimi covers the territory between the Mediterranean Sea and the Jordan River—East Jerusalem and the West Bank, up north to the Galilee and the coastal cities of Haifa and Akka, inland to Nazareth, and then south to Hebron and the coastal Gaza Strip—recounting his upbringing with eleven siblings and his decision to leave home at seventeen to cook in West Jerusalem, where he met and first worked with Yotam Ottolenghi. From refugee-camp cooks to the home kitchens of Gaza and the mill of a master tahini maker, Tamimi teases out the vestiges of an ancient culinary tradition as he records the derivations of a dynamic cuisine and people in more than 130 transporting photographs and 120 recipes, including: • Hassan’s Easy Eggs with Za’atar and Lemon • Fish Kofta with Yogurt, Sumac, and Chile • Pulled-Lamb Schwarma Sandwich • Labneh Cheesecake with Roasted Apricots, Honey, and Cardamom Named after the Palestinian newspaper that brought together a diverse people, Falastin is a vision of a cuisine, a culture, and a way of life as experienced by one influential chef.

✏Spanish Attitudes Toward Judaism Book Summary : Analyzing the history of the Jews of Spain from the time of the Visigoths to the present, this study investigates periods of discrimination against converted Jews that went beyond the merely religious, finding similarities to the racial and secular anti-Semitism of modernity. Some scholars have drawn parallels between the Spanish castizo ethnicism embodied in the "cleanliness of blood" statutes and the German volkisch (anti-Semitic) beliefs that sustained Nazism. Others have found Inquisition-like parallels in post-inquisitorial Spain--including during the Spanish Civil War and the Francoist era--a result of the survival of ethno-religious prejudices in a country where there were no Jews. The singularities of Spanish anti-Semitism are revealed in the "Spanish Paradox" of anti-Semitism coexisting with philo-Sephardism and also in the Spanish sensitivity to being viewed as a nation of Jews (the Black Legend). The author examines a historiographical controversy that went beyond scholarship, spilling onto the columns of newspaper polemic.

✏The Truth Machine Book Summary : How do you trap someone in a lie? For centuries, all manner of truth-seekers have used the lie detector. In this eye-opening book, Geoffrey C. Bunn unpacks the history of this device and explores the interesting and often surprising connection between technology and popular culture. Lie detectors and other truth-telling machines are deeply embedded in everyday American life. Well-known brands such as Isuzu, Pepsi Cola, and Snapple have advertised their products with the help of the "truth machine," and the device has also appeared in countless movies and television shows. The Charles Lindbergh "crime of the century" in 1935 first brought lie detectors to the public’s attention. Since then, they have factored into the Anita Hill–Clarence Thomas sexual harassment controversy, the Oklahoma City and Atlanta Olympics bombings, and one of the most infamous criminal cases in modern memory: the O. J. Simpson murder trial. The use of the lie detector in these instances brings up many intriguing questions that Bunn addresses: How did the lie detector become so important? Who uses it? How reliable are its results? Bunn reveals just how difficult it is to answer this last question. A lie detector expert concluded that O. J. Simpson was "one hundred percent lying" in a video recording in which he proclaimed his innocence; a tabloid newspaper subjected the same recording to a second round of evaluation, which determined Simpson to be "absolutely truthful." Bunn finds fascinating the lie detector’s ability to straddle the realms of serious science and sheer fantasy. He examines how the machine emerged as a technology of truth, transporting readers back to the obscure origins of criminology itself, ultimately concluding that the lie detector owes as much to popular culture as it does to factual science.

✏Memories of Jewish Life Book Summary : In this lyrical memoir, translated for the first time into English, noted Jewish historian, author, translator, and activist Augusto Segre not only recounts his rich life experiences but also evokes the changing world of Italian Jewry in the twentieth century. Raised in the traditional Jewish community of Casale Monferrato in the former ghetto, Segre depicts the changes wrought on his people by emancipation, fascism, world wars, and the Holocaust. Segre was a vocal opponent of Italian fascism and a combatant in Italy s partisan war against the Nazis. With the help of Italian peasants, he and his family spent eighteen months evading German and Italian fascist soldiers during the German occupation of Italy. Segre also was an ardent Zionist who helped refugees escape to Israel and ultimately immigrated himself in 1979. He spent three months in Israel in 1948, chronicling Israel s War of Independence. With an ethnographic eye, Segre interweaves his own memories with those of his rabbi father and uses newspapers, public documents, and letters to reveal the shared emotions and moods of a people and the impact the greatest events in European and Jewish history had on them all. The trend of Italian Jews toward assimilation was evident in Segre s time, and an awareness of it pervades this work. Memories of Jewish Life provides a rare glimpse into a traditional, religious and vibrant working-class Jewish community that no longer exists.
