✏Nanotechnology and Functional Foods Book Summary : The continued advancement in the sciences of functional foods and nutraceuticals has clearly established a strong correlation between consumption of bioactives and improved human health and performance. However, the efficacy and bioavailability of these bioactive ingredients (e.g., omega-3 oils, carotenoid antioxidants, vitamins, and probiotic bacteria) in foods often remains a challenge, due to their instability in food products and gastrointestinal tract, as well as their limited bioavailability. In some cases, these bioactive ingredients may impart an undesirable organoleptic characteristic to the final product, which hinders acceptance by consumers. In addressing these challenges, development of effective delivery systems is critical to meet the consumer needs for effective bioactives. The scientific knowledge behind developing effective delivery of bioactive components into modern and wide-ranging food products will be essential to reap their health-promoting benefits and to support the sustained growth of the functional foods market. Nanotechnology and Functional Foods: Effective Delivery of Bioactive Ingredients explores the current data on all aspects of nanoscale packing, carrying and delivery mechanisms of bioactives ingredients to functional foods. The book presents various delivery systems (including nano-emulsions, solid lipid nanoparticles, and polymeric nano-particles), their properties and interactions with other food components, and fate in the human body. Later chapters emphasize the importance of consumers? attitude towards nano-delivery for the success of the technology and investigate the challenges faced by regulatory agencies to control risks and harmonize approaches worldwide. ✏Omega 3 Fatty Acids and the DHA Principle Book Summary : The physical-chemical properties of the omega-3 fatty acid DHA (docosahexaenoic acid) enable it to facilitate rapid biochemical processes in the membrane. This effect has numerous benefits, including those involved in the growth of bacteria, rapid energy generation, human vision, brain impulse, and photosynthesis, to name a few. Yet DHA also carries risks that can lead to cellular death and disease. Omega-3 Fatty Acids and the DHA Principle explores the roles of omega-3 fatty acids in cellular membranes ranging from human neurons and swimming sperm to deep sea bacteria, and develops a principle by which to assess their benefits and risks. The DHA Principle states that the blending of lipids to form cellular membranes is evolutionarily-honed to maximize benefit while minimizing risk, and that a complex blending code involving conformational dynamics, energy stress, energy yield, and chemical stability underlies all cellular membranes. This book lays the groundwork to understanding this code. It examines the evolution of DHA and the membrane and explores the general properties of omega-3s and other membrane lipids. It then focuses on cellular biology before shifting to a practical discussion on applications. The authors discuss the DHA Principle as applied to petroleum degradation, winemaking, global warming, molecular farming, aging, neurodegenerative diseases, and the prevention of colon cancer. Reflecting the increased public interest that has emerged over the years, this volume uses an integrative approach to explain the complex roles of omega-3s in the membrane. Incorporating principles from chemistry, cellular biology, evolution, and ecology, this work gives researchers in a variety of fields the building blocks to stimulate further study.

✏Analytical Techniques for Studying the Physical Properties of Lipid Emulsions Book Summary : This book will review old and new methods to study emulsion stability and structure. Examples of emulsion-based foods include ice cream, yoghurt, and mayonnaise. The physicochemical properties of emulsions play an important role in food systems, as they directly contribute to the texture, sensory and nutritional properties of foods. One of the main properties is stability, which refers to the ability of an emulsion to resist physical changes over time. The development of an effective strategy to prevent undesirable changes in the properties of a particular food emulsion depends on the dominant physicochemical mechanism(s) responsible for the changes. In practice, two or more of these mechanisms may operate in concert. It is therefore important for food scientists to identify the relative importance of each mechanism, the relationship between them, and the factors that influence them, so that effective means of controlling the stability and physicochemical properties of emulsions can be established. Several techniques are used to study the physical behavior and structure of emulsions. Each technique has its advantages and disadvantages and provides different insights into the destabilization mechanisms. Among the oldest methods used to study emulsion stability is visual observation and small deformation rheometry. More recently, other techniques, such as ultrasound profiling, microscopy, droplet size distribution, and measurement of surface concentration to characterize adsorbed protein at the interface, have also been employed. Some of these techniques, such as droplet size distribution, involve some form of dilution. However, dilution disrupts some structures that play an important role in stability. The ability to study the stability of food emulsions in their undiluted form may reveal subtle nuances about their stability. Diffusing wave spectroscopy (DWS), laser scanning confocal microscopy (LSCM), nuclear magnetic resonance (NMR), and Turbiscan are among the more powerful, non-perturbing techniques used to characterized emulsions.

Cardiovascular disease results from complications of a silent and chronic arterial disease: atherosclerosis. The challenge for the practitioner is adapting diagnostic and therapeutic responses to prevent this common and complex disease. Dyslipidemia, are disorders of the metabolism of soluble transporters of lipids in extracellular spaces of the human body (including blood), called lipoproteins. They are major cardiovascular risk factors, causally related with atherosclerosis and are themselves multifactorial diseases, resulting from interactions between genetic and environmental factors. The study of genetic factors has recently taken a new path with the study of DNA as an experimental object. More than fifty genes of lipoprotein metabolism have been identified in both their physiological actions and their contribution to the pathogenesis of human dyslipidemia. The diversity of observations has refined our current knowledge of the control of lipid metabolism and energy homeostasis in living organisms beyond the limits of the cardiovascular system (e.g., brain, immune system, and development). These studies have given way to a shake-up of former phenotypic classifications, distinguishing new entities, defining targeted therapeutic strategies, providing a basis for different patterns of disease distribution in human populations.

✏Stress in Health and Disease An Issue of Psychiatric Clinics of North America Book Summary : Stress in the DSM is referred to only in the sense of post traumatic stress disorder (PTSD). However, some research studies estimate up to two thirds of illnesses seen by general practitioners are ‘stress related’–GI problems, sleep disturbance, mental concentration, headaches, fatigue, shortness of breath, high blood pressure, dermatitis, illnesses from lowered immune system, and vague aches and pains – all can be symptoms and outcomes of the elusive stress factor. This issue of Psychiatric Clinics of North America discusses the scientific medical facets of stress, written by mental health and medical practitioners. It looks at the brain-body connection of stress – what the body does to result in stress and varying results stress has on the body. This fascinating cross-discipline look at stress is intended for psychiatrists, general practitioners, cardiologists, GI specialists, neurologists, sleep medicine specialists, respiratory specialists, and others who diagnose and treat patients with stress suspected as part of the illness equation or with self-reported stress. Topics include: Measurement of stress; Anxiety and stress-how they work together; Relationship between genetics and stress; Role of glia in stress; Sleep and stress; Diet and stress; Supplements and stress; Effect of severe stress on early brain development, attachment, and emotions; Role of stress and fear on the development of psychopathology; Expressions of stress in psychiatric illness; Dermatologic manifestations of stress in normal and psychiatric populations; Humor and the psychological buffers of stress; Stress expression in children and adolescents; Stress in service members; Stress in the geriatric population.
